      Veggie and chickpea mediterranean salad

      Serves 1

      You'll need:

      • 2.5 ounces of chickpeas
      • ¼ cup of feta cheese, either cut into chunks or crumbled*
      • A few black olives
      • A small handful of red onion
      • A few slices of chopped bell pepper
      • A few slices of cucumber, chopped.

      Method

      There are no rules when it comes to making this super-simple salad. Simply throw it all together and add more or less of what you fancy from the ingredients. Why not try adding a handful of wholemeal pasta or some cubed and roasted potatoes?

      Salads can be eaten as they are or with a dressing. Try combining some olive oil, lemon juice, white wine vinegar and chopped parsley for a dressing you can drizzle over your salad for a little extra zing.

      *Note: As long as it's been made with pasteurised milk, feta is safe to eat during pregnancy.
