Veggie and chickpea mediterranean salad
- 2.5 ounces of chickpeas
- ¼ cup of feta cheese, either cut into chunks or crumbled*
- A few black olives
- A small handful of red onion
- A few slices of chopped bell pepper
- A few slices of cucumber, chopped.
There are no rules when it comes to making this super-simple salad. Simply throw it all together and add more or less of what you fancy from the ingredients. Why not try adding a handful of wholemeal pasta or some cubed and roasted potatoes?
Salads can be eaten as they are or with a dressing. Try combining some olive oil, lemon juice, white wine vinegar and chopped parsley for a dressing you can drizzle over your salad for a little extra zing.
*Note: As long as it's been made with pasteurised milk, feta is safe to eat during pregnancy.
