- 200g new potatoes - leave the skins on for a dish full of fibre
- One spring onion
- 1 tablespoon mayonnaise, or a little more if you’d like a creamier potato salad
- ½ tablespoon of olive oil
- Sprinkle of parsley
- Boil the potatoes and let them cool.
- Cut them into bite size chunks and combine them in a bowl with the rest of the ingredients.
This will make enough for three servings, so save a couple of portions to go with your lunch or dinner.
